Homemade Beef Stock

As convenient as buying pre-made stocks and broths at your local supermarket is (and I am guilty of this sometimes), it is still far superior to make your own stock, and it really isn’t so difficult.

Yield ~5 litres stock
Prep Time 10 minutes
Cook Time 6-8 hours total (1-2 for cooking meat & bones)
Special Equipment stockpot, colander, mesh sieve

Ingredients

Amount Ingredient Notes
3 medium (2 large) carrots peeled & chopped
1 large leek chopped
5 medium onions peeled & chopped
3 long celery stalks washed & chopped
2 dried bay leaves
6-7 fresh parsley stems
6-7 whole black peppercorns
2-3 fresh sprigs thyme
2 kg beef a cheap cut like a pot roast
2 kg beef marrow bones
0-2 tablespoons salt essentially, to taste or you can leave the stock unsalted
6 litres water
