A raita is simply a condiment made with yoghurt which is typically served with very spicy dishes as a cooling element. The following recipe is for one made with cucumber.
|1 cup||plain yoghurt||–|
|1 clove||garlic||finely chopped or made into a paste|
|1 tablespoon||fresh parsley||chopped|
|-||salt & pepper||to taste|
- Combine all ingredients in a bowl.
- Cover and refrigerate for (at least) half an hour.
- Serve chilled.
