A raita is simply a condiment made with yoghurt which is typically served with very spicy dishes as a cooling element. The following recipe is for one made with cucumber.
Ingredients

| 1 cup | plain yoghurt | — |
| ½ | cucumber | chopped |
| 1 clove | garlic | finely chopped or made into a paste |
| 1 tablespoon | fresh parsley | chopped |
| - | salt & pepper | to taste |
Directions
- Combine all ingredients in a bowl.
- Cover and refrigerate for (at least) half an hour.
- Serve chilled.
